The Icing On The Cake

Award-winning cupcake baker and wedding cake creator extraordinaire John McLean of The Sugar Rooms gives the low down on the Royal Wedding cake.

"Just like all the fashionista's out there who were guessing who the dress designer was to be, I was dying to find out who the cake was to be created by!

My first thoughts were either Peggy Porschen, Mich Turner or Eric Lanlard, who are all amazing cake designers and who have all high profile celebrity clients. So it was a surprise that Kate went with Fiona Cairns, while a fabulous cake designer she has a more commercial clientele, (supplying Harrods, Harvey Nikes, Waitrose, John Lewis, Le Bon Marche with more than 27,000 cupcakes a week!!).

So my first thoughts when I saw the cake were, WOW!! That is amazing, breathtaking, all the usual complementary words, but after I looked at it a few times I started to doubt that I did actually like it!

RoyalWillsCakeThey went for a traditional tiered fruitcake; and it's very rare that I get asked for a traditional fruitcake, although I still get the odd one (usually it's the brides mother that insists on at least 1 tier - for the older guests.). It had an amazing amount of intricate detail and sugar work, the technical work that went it was extraordinary and they used a lot of different techniques. Using that many can make the cake look 'plastery' and 'too much', less is more as they say, and on my next look I decided that really there was too much going on.

For such a young couple I thought they might have gone for something more contemporary with tiers of different fillings although William decided on his favourite McVities 'Freezer Cake', a non-baked chocolate and biscuit cake set in the freezer as his groom's cake.

After seeing her dress I think she definitely should have gone contemporary and that the cake itself did not really marry up with her dress. She should have gone with something like one of my favourite ever creations - the cake from Sex & City 2 by an American designer Ron Ben Israel (pictured below).

But then again as with the dress there may be some traditional rules that Royal brides have to adhere to and also judging by the backdrop in which the cake was photographed, the location of the reception may not have lent itself to something so contemporary.

So as with the dress spawning countless copies and variations, will we have a return to traditional tiered fruit wedding cakes? My thoughts are, no, I don't think too many people will follow suit, but I will keep you posted as soon as The Sugar Room gets its first "I want a cake like Kate & William's Cake" loll!! ... "
